Olla alcorina


Ingredientes

  • 200g of pork ribs
  • 500g of potatoes
  • 200g of runner beans
  • 2 morcillas (black pudding-style blood and onion sausages)
  • 2 garlic cloves
  • 60g of almonds
  • 60g of oil
  • 1 bay leaf
  • 1 sprig of thyme
  • 1/2 l. of water
  • Salt as required

    Pre-preparation


    To start preparing the L’Alcora style stew, the first step is to stir-fry the pork ribs in a small amount of oil and on a medium heat. Stir constantly until they start to brown on the outside and are partly cooked on the inside. Next, stir–fry the potatoes, previously peeled and cut into medium sized pieces. Do the same with the runner beans and morcillas.

    Cooking


    When all the ingredients are browned, it is time to add the water, Bay leaf, thyme and salt. Bring the mixture to the boil and then reduce heat to nearly minimum and cook for the remaining 60 minutes it takes for this traditional dish to be ready.

    Garnish


    Lastly, when there are only about ten minutes left for the stew to be ready, add the garnish made of garlic cloves and almonds. For this, use a mortar and pestle to obtain a smooth dough.
