Paella


Ingredientes

  • 1/4 Kg of rabbit
  • 1/4 Kg of chicken
  • 1/4 Kg of rib
  • 250 g of wide green beans
  • 100 g of white beans
  • 6 artichokes
  • 1/2 a red pepper
  • 1 garlic
  • 2 ripe tomatoes
  • 12 mangetout
  • 1/2 Kg of rice
  • 1.5 litres of water
  • 12 snails ("vaquetas")
  • 2 spoonfuls of oil
  • Salt to taste
  • Saffron to taste
  • Preparation


    40 minutes

    Pre-preparation


    First, bone all of the meat and fry it with two spoonfuls of oil in the paella dish. When it is brown, add the artichokes, the white beans and the pepper and fry all well. A little later, add the diced garlic and the grated tomato, the cleaned snails, the saffron and the water. Bring it to the boil and leave it to simmer for a few minutes.

    Cooking


    Once it has bubbled a few minutes, add the the green beans, mangetout, the colouring or saffron, and the salt. After about 15 minutes, add the rice on a high heat and, after five minutes, lower it and keep it to the minimum until it is finished. In total, give the rice 20 minutes, or so.
